JANUBIO MARINE SALT OBTAINING Being a natural and ecologic product, sea and sun are the basic needed elements to produce salt, not forgetting the real main character of this traditional salt marsh: men and women labour, “salineros” and “salineras”, or as they are known in Europe, ”salticultores” - salt farmers. Marine salt is collected in sunny weather, harvest time is from April to October, depending on climate. To make the most of winter time, cleaning works and maintenance of grinds and salt processing plants or salt marshes are carried out. In the old times, windmills were in charge of extracting water from the puddle, at about 5º, and this was channelled to the salt processing plant, reaching approximately 15º. This water passes to the grinds and is left there to crystallize at about 25º. After that, salt is produced and collected with a rake and then is put over a slope with the help of a shovel. These tools are essential for collecting and piling up. This work is completely done by hand, unlike mine salt, which has other extracting methods. Nowadays, the only thing that has changed are the pumps or engines which lift water towards the general jet, substituting windmills, which remain leaving a print of their recent past. The result is natural, ecologic salt, without preservatives or additives. This is Janubio salt, 100% marine, marine salt from the Atlantic, with the best properties and great quality.
